Description 

This recipe features freshwater smelt that are coated in a seasoned flour and cornmeal mixture and then fried until crispy and golden brown. The dish is a classic and simple way to enjoy this small fish, perfect as an appetizer or main dish.

 

Ingredients:

  • 1 pound freshwater smelt, cleaned and rinsed
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying
  • Lemon wedges, for serving

 

Instructions:

  1. In a shallow bowl, combine the flour, cornmeal, salt, and pepper.
  2. Heat a large skillet over medium-high heat and add enough vegetable oil to coat the bottom of the pan.
  3. Dredge the cleaned smelt in the flour mixture, shaking off any excess.
  4. Place the smelt in the hot oil, being careful not to overcrowd the pan.
  5. Fry the smelt for 2-3 minutes on each side, until golden brown and crispy.
  6. Use a slotted spoon to remove the smelt from the pan and place them on a paper towel-lined plate to drain any excess oil.
  7. Serve hot with lemon wedges on the side.
